Food for Thought 2026 explores the changing meaning of nourishment in travel

A good meal can do more than satisfy hunger. It can steady the body, recall a place, mark the start of a journey or turn an ordinary moment into something more considered.

That idea sits at the heart of the 2026 edition of Food for Thought, gategroup’s editorial magazine exploring how nourishment is being redefined in travel. Now in its third issue, the magazine looks at food through a wider lens: health, culture, sourcing, creativity, sustainability and the growing expectation that what we eat should support how we feel.

Across nine chapters, Food for Thought 2026 brings together chef perspectives, global food trends and visual storytelling from gategroup’s culinary community. The edition opens with Eat with the rhythm of life, which explores how food can work with the body’s natural rhythm, supporting energy, digestion, sleep and well-being. It also introduces intuitive eating as a more personal way to think about nourishment: less about strict rules, more about understanding what feels right, and when.

From there, The expansion of proteins looks at one of the most active areas of food innovation. Moving beyond familiar sources, the chapter explores fungi, algae, seaweed and insects, asking how protein can become more sustainable, functional and adaptable to future diets.

Farm fresh brings the story back to the source. Through examples from Japan, the chapter follows the role of local farms, shorter supply chains and close producer relationships in bringing freshness, flavour and provenance into the complex world of airline catering.

In Slow food, the pace shifts. The chapter looks at fermentation, sourdough and regional traditions, particularly in Latin America, where food carries memory, migration and identity. It is a reminder that innovation is not always about speed. Sometimes, it begins with older methods, patience and respect for ingredients.

The magazine also makes room for what we drink. Mindful drinking explores a cultural shift among younger consumers, who are rethinking alcohol, moderation and the rise of low- and non-alcoholic options. The focus is not abstinence, but intention: flavour, ritual and social enjoyment without losing sight of well-being.

With The local way, the journey becomes more emotional. The chapter considers how destination-inspired cuisine can give travelers a sense of place before they arrive. Through local ingredients, regional dishes and cultural references, food becomes more than service; it becomes part of the travel experience itself.

Mindfoodness turns attention to one of the most pressing questions in food today: waste. The chapter introduces gategroup’s global movement to rethink how ingredients are prepared, used and valued, showing how surplus, trimmings and by-products can become new dishes rather than discarded material.

Flavor by design explores the visual language of food. In an age where food is photographed, shared and remembered visually, presentation is no longer decorative. Colour, texture, plating and balance all help shape expectation before the first bite.

The final chapter, The future of nourishment, brings these threads together. It looks at a new generation of consumers who want food and beverages that are convenient, functional, transparent and aligned with their values. Health, in this context, is no longer separate from responsibility. It is connected to sustainability, authenticity and the choices people make every day.
